Regular Smoking is our most popular process. Fish is filleted and cut into nice size chunks or halves then put through our regular smoking process.
This normally takes about 3 days.

Fish is filleted, cut into strips, brined, seasoned & peppered then put through our long smoking process. Processing takes 4 to 5 days.

Lox is salmon that is filleted then salt cured and cold smoked. Processing normally takes about 3 to 4 days to complete.

We have two types of canning processes: Fresh Pack, which is just plain canned with a touch of salt (we can do salt free) and Smoked and Canned which is smoked then canned to give it that great smoked flavor. Canning is the best way to keep your fish for years or send to friends & relatives.
We store your fish in our freezer until our next canning date. When the process is complete, you can either pick it up or we will ship your order to you.
Fresh Pack - $1.95 per can
Smoke & Canned - $2.65 per can

Vacuum Pack your (fresh or smoked) fish. Each Vacuum Bag holds from 1 to 2 lbs. of fish. Cost - $1.50 per bag. Larger bags are available for whole fish. Cost - $2.00 to $2.50 per bag.
A cutting fee is charged for staking and filleting. Cost varies with the size of the fish but having a professional do it saves you meat.

SHIPPING
We ship your fish anywhere in the United States. All perishable products, both fresh and smoked, will be packed in a Styrofoam cooler and shipped next day air via Federal Express.
